TWD carrot cake...

I measured my dry ingredients...


I whisked my dry ingredients...



I prepped my carrots...


I grated my carrots...



I baked my little carrot cakes...



Well, I gave it a shot. I don't know what exactly caused the problem...I'm sure I did not account for the amount of leavening in the batter when I filled my little cake pans...I left out the nuts, coconut and raisins (we're not really into chunks in cake around here) and did not compensate for that...should I have replaced those ingredients with something else??? I have the worst luck with cakes made from scratch. Normally I am such a perfectionist that I would have given this another shot, but at this point I was out of carrots, out of time and...out of patience...it had been a long day!

That is interesting- I made some cupcakes and the tops flattened out like that too. Hmmm- maybe next time?

That last picture actually made me feel normal! SO many of my cake attempts have ended like that. It's SO frustrating!

Oh no! the last picture is so sad. I wonder what happened? I definitely hope you give it another try. I am not a carrot cake fan but I really liked this one. ps. Your question on my blog about the cupcake liners. They are called "party nut cups" or "souffle cups" and I buy them at Smart&Final :)

awww, i actually kind of giggled at that last photo, even though i'm sure you were cussing at it!! sorry they didn't come out for you. maybe it had something to do with the shape of the pan with that thing in the middle. hopefully you might try it again some other time, it was very yummy!

Wow, I'm not sure what would have made them do that! I think you're probably right that it had something to do with the leavening, and maybe overfilling the pans. I did the same thing with my carrots (finely chopped rather than shredded) and didn't have a problem, so I doubt it was that.

this was all my fault. I was burdening you with all of my issues and so you had no time to focus on your project. ha it makes me actually feel good that the great Annemarie isn't always perfect in the world of baking. however, in my book, you are still a fabulous cook!

i'm sorry it didn't work out for you. i guess you left out too many ingredients?? even if you don't like chunky cakes my recommendation is to try the pastry queen recipe, chunks and all and see how you like it :)

ack! oh no! i'm not sure if this is correct, but i have one theory...it looks like maybe your carrots were processed really fine, which may have may have caused them to leak too much moisture into the batter as it baked. (i did a course grate and loosely packed them into the measuring cup.) so frustrating when things go wrong!

When I quickly skimmed though the pictures before reading I thought that it was a nice outside crust-like thing and you were going to fill it with something delicious and beautiful.
No such luck...it is good to see that at least something you did wasn't perfect...it makes me feel better about my own muffed up attempts, although I am sure if you made them again they would be perfect afterall. :)
BTW...levening? Who keeps levening at their house? I have A LOT to learn from you

too funny! I love the wind up with the preparation photos, I was expecting the masterpiece carrot cake! Sorry your tiny cakes didn't come out, this recipe was giving everybody problems!

OK, I'm so upset for you because I'm the same way about being a perfectionist, but that was a seriously funny setup. Hmmm... I wonder if the carrot was shredded too small. I think it says to grate it "regular" size and it looks like it was smaller. I wonder if that would affect it. I overfilled too and had sinkage, but not as much (and I left all the extras out too). Anyway, don't give up. You'll beat it!!

I feel your pain! Its strange that some of us had better experiences than others when trying to convert the recipe to cupcakes or mini cakes. I, however, am in your sinking club :(

Oh no!
I lost my cupcakes to underestimating the rise-factor too... The mini-cakes started to over-flow as well, but I wiped away the edges and finished their bake time, and salvaged them enough to call them 'rustic'.
So sorry it didn't work out for you.

So sorry your cakes deflated and disappeared on you. This recipe seemed a little finicky, anyhow. At least your preparation photographs are gorgeous! Great post, I like your honesty!
