pie crust cookies...


I had leftover pastry from the pot pies, so I took a trip down memory lane. My mom used to make pie crust cookies for us at Thanksgiving with the excess dough from her pies. YUM! It's pretty simple...just roll out remaining pastry dough, cut into squares (I use a pizza cutter), "dot" with a fork and sprinkle with sugar. Bake at 375 degrees for 10-15 min, or until golden brown. I enjoyed every bite!!

ohmygod. I totally wanted ice cream with mine but I was too lazy to hit up the grocery store so I am drooling over your vanilla bean ice cream! Great job!

aahh. my mom used to make those with her extra pie crust too. Hers were more like little strips, but I loved them. That is a trip back down memory lane.

I never thought of making cookies out of the crust until I saw it in Dorie's book. I think the cookies you made would be great with a lemon curd. Great job on the weekly challenge and welcome to the group.
